Caribbean Jerk Chicken Stew
Gourmet meal for two = $3.00
Begin by getting the yuka boiling as it is the toughest competitor in the pot.
Yuca is one of those hard headed vegee's so I'd give it 3 hours and let rest overnight in the perfect conditions. Suggested cooking time a minimum of 3 hours. You want your yuca translucent and gummy.
Jerk Sauce
Add your Jerk Sauce to the slightly boiling yuca right off the bat as well as your desired amount of garlic.
FIRE UP THE GRILL!
*You're probably want to get your charcoal ignited about 1.5 hours into this deal. I don't use gas grills for there is no flavor. This particular meal isn't BBQ, it's "Jerk".
Is your yuca getting tender? Great.
Add in your carrots, onion and breed of salsa that you like.
Time to get that wine or liquor.
The alcohol will cook off, be generous with what you care to taste.
LET'S CHECK THE CHICKEN!
*The sauce created for this dish is no more than sweet peppers, vinegar, onion, onion powder and a squeeze of lemon or lime.
Your homemade sauce is going to burn into the grill, let it.
Never overcook your chicken! Keep in mind that foods continue to cook until they return to room temperature and the chemical equations have balanced.
*Note: I never mentioned salt or cooking oils.
I'm not a teacher so if I missed something, I'm quite sure someone will let me know.
Enjoy your $3 meal for two.
