Irish Malt
- Half gallon heavy cream
- Cup brown sugar
- Honey to taste
- One package / 4 ounces Irish moss
- Dash of sea salt
- 4 Cinnamon sticks
- Begin by boiling the Irish Moss & cinnamon in a large pot for about 30 minutes. Reduce this to a simmer for another 30 minutes.
- Your looking for the water to become slightly thicker and the Irish Moss should be almost soft.
- Remove this from the heat and strain the Irish moss out into a food processor, turn it into a paste.
- Reduce the stove temp to the minimum and add the half gallon of heavy cream to the Irish Moss / cinnamon water. You simply want to warm this mixture almost to boil. Careful as it will scorch easily.
- Add your brown sugar & honey about 5 minutes into this slow simmer. Between 25 and 30 minutes your done.
- Remove from heat keeping it covered, transfer to containers and refrigerate.
- Drink up once cooled.
Yuca Base
Yuca is very similar to a potato with double the calories and almost twice the fiber.
- Simply grab some yuca, skin it, cut it into bite sized pieces (Greatly reduces cooking time) and place it in a very large pot of boiling water.
- Cook approximately 2 hours or until tender. Yuca from different regions can very greatly within cooking times.
Here's the beauty of yuca, I have seasoned it with garlic, onion, Adobo, peppers, cilantro, Italian seasoning, you can season your boiling yuca with just about any seasoning you prefer.
Unlike potato, yuca has a gummy gooey consistency that most people I've shared this with simply loved.
You don't have to change your diet very much, 1 glass of Irish Malt at lunch and dinner, 1 bowl of whatever yuca dish you created with lunch and dinner.
